The Grey Goose - Gilmorton

The Grey Goose offers a contemporary and modern experience for both dining and drinking, and is open seven days a week. Owners Shaun and Martin, who took the establishment over in March 2015 have certainly gained a reputation for excellence. With unmatched front of house skills Martin is the perfect host, coupled with Shaun's magic touch in the kitchen it makes the perfect winning combination. 

Both aged 14 they applied for work experience in restaurants starting off as 'pot-washers' instantly falling in love with the environment. Thepassiontocarveanicheinthisprofessionhad begun. Martin and Shaun's personal ambition even at this age, was to own their own restaurant. 

Shaun's career started in the popular chain of 'Blu' restaurants where he worked across the UK refining his techniques. As a trainee he learned the skills required to eventually become Head Chef. 

Returning to Leicester 10 years later, he took up the Head Chef position at the ‘2 rosette’ Watsons Restaurant & Bar aged 24 - whatanachievement! Goingontoworkat'DonLeone'and'Bullat Broughton' then at 'Stones Events,' where he hosted many successful dining events set in beautiful venues, helping create delectable and delicious catering for the rich and famous. 

Martin however took a different route. Working at Morrisons on the fishmongers counter whilst at school, gave him the experience and skill required in preparing and displaying various types of fish. Then whilst studying for a degree in criminology he was employed at Kilworth House as a waiter where a certain level of hospitality was called for, and expected. 

Leaving University Martin pursued his career in hospitality at the newly opened restaurant in his local village, The Grey Goose. Working full time with an excellent team Martin thrived but took 

the opportunity a few years later to travel, visiting Asia and Australia. Whilst there he was employed by farms picking fruit and vegetables, and gained more work experience in various cafes/restaurants. Martin eventually returned home and popped into The Grey Goose where the owner John Miles asked if he wanted to start back work on Friday - he'd only been in the Country four hours!! Happy to return Martin worked hard and willingly took on extra responsibilities. 

Shaun also wanted to return to his first love - the kitchen! He approached the owner of The Grey Goose, and within a couple of days he was offered the position of Head Chef! He worked extremely hard creating fantastic and innovative dishes served with flair and style. However Shaun still yearned to own his own restaurant. Deciding to hand in his notice after a couple of years was a life changer. To his astonishment the owner offered him and Martin the opportunity to own this fabulous establishment! They didn't need asking twice!
