Potato Salad

It’s simple, but everyone loves it, and with the extra kick added by the leeks it can’t fail to please.

Ingredients (Serves 4):

1/2kg Potatoes
125ml Mayonnaise
1Tbs Lemon Juice
1tbs Olive Oil
Salt & Pepper
2tbs Fresh Chopped Chives
4tbs Chopped Leaks

Potato Salad
Method:

Cook and slice the potatoes and allow to cool.

Put three-quarters of the potatoes in a large mixing bowl along with the mayonnaise, lemon juice, oil seasoning and half the chives. Gently toss the mixture with two large spoons until the potatoes are coated.

Place the mixture in a serving bowl and top with the remaining potatoes.

Sprinkle with the remaining chives and arrange the leeks around the edge of the bowl.

Put in the fridge for at least half and it’s ready when you are
