Seared Marinated Tuna
Ingredients (Serves 4):
4 slices fresh tuna about 1.5cm thick (about 200-225g each in weight)
3 cloves of finely chopped garlic
1 bunch of fresh green fennel
1tsp fennel seeds, ground in a mortar
2 small dried red chillies, crumbled
200ml white wine
100ml olive oil
Green chilli and lemon peel sauce to serve
Place the tuna steaks on a board. Rub half the garlic into the fish, along with half the chopped fennel and fennel seeds, one of the chillies and salt and pepper. Turn over and do the same on the other side. Place the steaks side by side in a large flat container, and pour in the white wine, olive oil and juice of 1 lemon. Cover and leave to marinate in a cool place for at least 1 hour. Preheat grill or griddle until very hot, and sear the tuna for 1 minute only on each side. Serve hot with a wedge of lemon and the sauce.
To make the sauce, deseed and finely chop 6 hot green chillies and slice the peel from 1 lemon into very fine strips. Combine 120ml olive oil, season and leave to sit for several hours before serving.
