Fruit Loaf by Hambleton Bakery

Ingredients (Makes 1 Loaf):

200g bread flour
55g caster sugar
6g yeast
90ml milk
55g butter
1 egg
70g currants
70g sultanas
20g peel
2g salt

Method:

Soak the currants, sultanas and peel in tea for 20 minutes. Warm the milk and yeast in a pan, add the flour and eggs and mix to form a dough mixture. Add the sugar and butter, once smooth fold in the fruit. Cover and leave to prove at room temperature until double in size, 1-2hrs. Once the mixture has doubled in size, knock back (taking the air out of the mixture). Shape the mixture to fit the loaf tin, place in the loaf tin and leave to prove at room temperature, this can take anywhere between 2 and 4 hours. Cook for around 30 minutes at 200ºC.
