Baked Peppers

This simple, yet flavoursome recipe is ideal as a starter, lunch or supper dish. Serve as either an accompaniment, or with salad leaves or crusty bread as a tasty supper alternative.

Baked Peppers
Serves 4

Ingredients:

4 peppers, halved and seeds removed
8 tsp pesto sauce
225g baby plum tomatoes, halved
200g Feta cheese, cubed
2 tbsp olive oil

Method:

Preheat the oven to Gas 6, 200 C. Place the halved peppers into a Pyrex 39 x 25cm roaster.
Place 1 tsp of pesto into each half and spread out a little.
Divide the tomatoes and Feta between the peppers, drizzle with the oil.
Bake in the oven for 25-30 minutes until the peppers are cooked through and the cheese is golden at the edges.
